Bihari cuisine is known for its unique and spicy flavors, and one of its most popular dishes is the mutton kabab. Made with tender mutton, aromatic spices, and a few simple ingredients, this dish is perfect for any occasion, whether it's a family gathering or a festive celebration. In this article, we will guide you through the process of making authentic Bihari style mutton kabab.
Ingredients 500 grams of mutton (boneless, cut into small pieces)
2 tbsp ginger-garlic paste
2 tbsp raw papaya paste
2 tbsp mustard oil
1 tsp red chili powder
1 tsp coriander powder
1 tsp cumin powder
1 tsp garam masala powder
Salt (to taste)
Wooden skewers (soaked in water)
Method- In a bowl, marinate the mutton pieces with ginger-garlic paste, raw papaya paste, mustard oil, red chili powder, coriander powder, cumin powder, garam masala powder, and salt. Mix well and keep it aside for at least 2 hours or overnight in the refrigerator.
- Preheat the oven to 180°C. Thread the marinated mutton pieces onto wooden skewers.
- Place the skewers on a baking tray and bake for 15-20 minutes or until the kababs are cooked through and lightly browned on the outside. You can also cook the kababs on a grill or barbecue for a smoky flavor.
- Serve the mutton kabab hot with mint chutney and sliced onions.
Tips:- To make the raw papaya paste, blend fresh raw papaya in a mixer until smooth.
- Mustard oil is commonly used in Bihari cuisine for its strong flavor and aroma. However, if you don't have access to it, you can use any vegetable oil instead.
- Soaking the wooden skewers in water prevents them from burning while cooking.
