Recipe - Maharashtrian Thalipeeth

Thalipeeth is a traditional Maharashtrian flatbread made with a mix of various flours and spices. It is not only delicious but also packed with nutrition. Thalipeeth is typically served with yogurt, pickle, or chutney and makes for a wholesome breakfast or snack option. Here's a step-by-step guide to preparing Maharashtrian-style Thalipeeth:

Ingredients

1 cup multigrain flour (combination of wheat flour, rice flour, and gram flour)
1/2 cup finely chopped onions
1/4 cup chopped coriander leaves
2 tablespoons chopped green chilies (adjust according to taste)
1/4 cup grated carrots
1/4 cup grated bottle gourd
1/4 cup chopped spinach leaves
1 teaspoon cumin seeds
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder (adjust according to taste)
Salt to taste
Water for kneading the dough
Oil or ghee for cooking

Method

- In a large mixing bowl, combine the multigrain flour, chopped onions, coriander leaves, green chilies, grated carrots, grated bottle gourd, chopped spinach leaves, cumin seeds, turmeric powder, red chili powder, and salt.

- Gradually add water and knead the mixture into a soft dough. Adjust the water quantity as needed to achieve the right consistency. The dough should be pliable and easy to handle.

- Divide the dough into equal-sized portions and shape each portion into a ball.

- Take a clean, flat surface or a greased tawa/griddle. Place a dough ball on it and flatten it using your fingertips to form a round disc of approximately 6-7 inches in diameter. You can also use a plastic sheet or banana leaf for easy handling.

- Make a small hole in the center of the flattened disc. This helps the Thalipeeth cook evenly.

- Heat a tawa/griddle on medium heat. Once hot, place the flattened Thalipeeth on it.

- Drizzle a little oil or ghee around the edges and in the center hole of the Thalipeeth. Cook for a few minutes until the bottom side turns golden brown.

- Flip the Thalipeeth and cook the other side until golden brown. Press gently with a spatula to ensure even cooking.

- Once cooked on both sides, transfer the Thalipeeth to a serving plate. Repeat the process with the remaining dough portions.

- Serve hot Thalipeeth with yogurt, pickle, or chutney of your choice.
