Ingredients 1/2 cup Meyer lemon juice (about 4-5 Meyer lemons)
1 tablespoon Meyer lemon zest
3/4 cup granulated sugar
4 large eggs
1/2 cup unsalted butter, cubed
Method- In a heatproof bowl, whisk together the Meyer lemon juice, Meyer lemon zest, sugar, and eggs until well combined.
- Create a double boiler by placing the bowl over a pot of simmering water. Make sure the bottom of the bowl does not touch the water.
- Cook the lemon mixture over medium-low heat, stirring constantly with a wooden spoon or silicone spatula. Continue stirring until the mixture thickens, which usually takes about 8-10 minutes.
