Ingredients Cauliflower florets(blanched in hot water) - 1 cup.
All purpose flour - 1/2 cup.
Cornstarch - 1/4 cup.
Salt - 0 to taste.
Pepper powder - 1 teaspoons.
Light soya sauce - 1 teaspoons.
Oil - 0 to fry.
Ginger(finely chopped) - 1/2 teaspoons.
Garlic(finely chopped) - 1/2 teaspoons.
Green chillies(finely chopped) - 1/2 teaspoons.
Celery(finely chopped) - 1 tablespoons.
Onions(finely chopped) - 1 tablespoons.
Green bell pepper(finely chopped) - 1 numbers.
Peppercorn(crushed) - 1/2 teaspoons.
Light soya sauce - 1/2 teaspoons.
Dark soya sauce - 1/2 teaspoons.
Sugar - 1 pinch.
Vinegar - 1 tablespoons.
Chilli paste - 1/2 teaspoons.
Green chilli sauce - 1/2 teaspoons.
Coriander leaves(for garnishing) - 1 stricks.
Spring onions(finely chopped) - 1 tablespoons.
Method:1. Cut cauliflower into florets and blanch them in hot water.
2. For making the batter, in a bowl, add all-purpose flour and cornstarch, salt, pepper powder and little light soya sauce.
3. Add little water and make into a thick paste.
4. Pour the batter on the cauliflower florets and mix.
5. Heat oil in a pan for deep frying the florets; when the oil is hot, deep fry the batter coated florets until they slightly change colour.
6. Remove and again deep fry the florets for the second time to make them crispy.
7. For making the sauce: Add oil in a pan, and when it gets hot, add finely chopped ginger and garlic celery, chopped green chillies, chopped onions, salt until transparent, salt, finely chopped bell pepper (optional), crushed pepper, light soya sauce, dark soya sauce, sugar, vinegar, chilli paste, chilli sauce and mix well.
8. Add the double fried cauliflower florets into the sauce and toss well.
9. Sprinkle some coriander leaves and finely chopped spring onions and toss well. Serve hot.
