Ingredients 4 medium-sized lemons
1 cup jaggery, grated or chopped
1 teaspoon red chili powder (adjust to your spice preference)
1/2 teaspoon cumin seeds
1/4 teaspoon black salt (optional)
1/4 teaspoon roasted cumin powder
A pinch of asafoetida (hing)
1 tablespoon vegetable oil
Method - Wash the lemons thoroughly under running water. Cut them into small pieces, removing any seeds. You can choose to keep the lemon peel on or remove it based on your preference. If using the peel, ensure it is thoroughly washed and free from any wax or chemicals.
- Heat vegetable oil in a pan over medium heat. Add cumin seeds and let them splutter.
- Add the chopped lemons to the pan and sauté for a couple of minutes.
- Stir in the grated or chopped jaggery, red chili powder, asafoetida, and black salt (if using). Mix well until the jaggery starts to melt and coat the lemon pieces.
- Reduce the heat to low and cover the pan with a lid. Let the chutney simmer for about 10-15 minutes or until the lemons are soft and the mixture thickens. Stir occasionally to prevent sticking to the bottom of the pan.
- Once the chutney reaches the desired consistency, turn off the heat. Add roasted cumin powder and mix it well.
