Ingredients of Sattu Kachori
For the Dough: 2 cups all-purpose flour (maida)
1/4 cup semolina (sooji)
4 tablespoons oil or ghee
1/2 teaspoon salt
Water (as needed)
For the Sattu Filling: 1 cup sattu (roasted chickpea flour)
2 tablespoons finely chopped onions
2 tablespoons finely chopped green chilies
2 tablespoons finely chopped coriander leaves
1 teaspoon carom seeds (ajwain)
1 teaspoon fennel seeds (saunf)
1 tablespoon mustard oil
Salt to taste
Water (as needed)
How to Make Sattu KachoriPrepare the Dough:- In a large mixing bowl, combine all-purpose flour, semolina, and salt.
- Add oil or ghee and mix well until the mixture resembles breadcrumbs.
- Gradually add water and knead to form a smooth dough.
- Cover and let the dough rest for 20-30 minutes.
Make the Sattu Filling:- In another bowl, combine sattu, chopped onions, green chilies, coriander leaves, carom seeds, fennel seeds, and salt.
- Add mustard oil and mix thoroughly.
- Sprinkle a little water and mix until the filling holds together when pressed. Set aside.
Shape the Kachoris:- Divide the dough into small lemon-sized balls.
- Flatten each ball slightly and make a well in the center.
- Place a spoonful of sattu filling in the well and gather the edges to seal.
- Gently flatten the filled dough ball to form a disc. Repeat with the remaining dough and filling.
Fry the Kachoris:
- Heat oil in a deep frying pan over medium heat.
- Carefully slide the kachoris into the hot oil, a few at a time.
- Fry until they turn golden brown and crisp on both sides.
- Remove and drain on paper towels.
