Ingredients
Oil as required
1/2 cup sev (you can use any)
1/2 teaspoon mustard seeds
1/2 teaspoon cumin seeds
A pinch of asafoetida (hing)
1 tablespoon ginger garlic paste
2 green chillies, finely chopped (adjust according to your taste)
2 medium onions, thinly sliced 2 big tomatoes, chopped1/2 teaspoon turmeric powder
1/4 teaspoon red chilli powder
1/2 teaspoon kashmiri red chilli powder
1 teaspoon coriander powder
Salt as required
Lemon juice from 1/2 lemon
Water as required
Few sprigs of fresh coriander, finely chopped
Directions
1.To begin making the Sev Tamatar Ki Sabzi, first heat oil in a wok/kadhai. Add mustard seeds, cumin seeds and asafoetida and let the seeds crackle.
2.Once they crackle, add the greek chillies and ginger garlic paste. Let it cook for about 30 to 40 seconds.
3.After 30 to 40 seconds, add the sliced onions and let them cook till they turn soft and translucent.
4.Once it is done, add in the chopped tomatoes. Mix everything properly, cover the lid and let it cook till the tomatoes become soft.
5.Open the lid and add all the masalas including turmeric powder, red chilli powder, kashmiri red chilli powder, coriander powder and salt.
6.Mix well, close the lid and let it cook for 4-5 minutes.
7.After 4-5 minutes, add the required water. It depends on how much gravy you prefer.
8.Let it cook for another 5 minutes or till it has reached the desired consistency.
9.Lastly, add sev, lemon juice and mix everything well. Cook for about 30 seconds, switch off the stove and garnish it with chopped coriander.
10. Serve Sev Tamatar Ki Sabzi with phulka or it is served with Moti roti on the road side dhabas.
