1/2 cup oil or ghee
1 teaspoon cumin seeds
2-3 bay leaves
4-5 cloves
2-3 green cardamom pods
1 cinnamon stick
1 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon coriander powder
1 teaspoon garam masala powder

How to Make Shaljam Gosht
Step 1:Start by heating the oil or ghee in a large pot over medium heat. Add the cumin seeds, bay leaves, cloves, green cardamom pods, and cinnamon stick, and sauté for a few minutes until they release their aroma. Then, add the finely sliced onions and cook until they turn golden brown. Stir in the ginger-garlic paste and slit green chilies, cooking for another 2-3 minutes until the raw smell disappears.
Step 2:Next, add the mutton pieces to the pot and brown them on all sides, which should take about 5-7 minutes. Once the mutton is browned, add the chopped tomatoes and cook until they become soft and blend into the mixture. Add the turmeric powder, red chili powder, coriander powder, and salt, stirring well to combine the spices with the mutton and tomato mixture.
Step 3:After the spices are well incorporated, add the whisked yogurt, mixing it thoroughly into the curry. Let it cook for another 5 minutes until the yogurt is well absorbed. Then, add the chopped turnips to the pot and mix them in with the mutton and spices.
