Ingredients

4 medium-sized potatoes, peeled and diced
1 onion, finely chopped
2 green chilies, finely chopped (adjust according to your spice preference)
3 cloves of garlic, minced
1 teaspoon cumin seeds
1 teaspoon turmeric powder
1 teaspoon coriander powder
1/2 teaspoon red chili powder (adjust to taste)
1/2 teaspoon garam masala
Salt to taste
2 tablespoons oil
4 eggs
Fresh cilantro leaves, chopped (for garnish)

Method

- Heat oil in a large skillet over medium heat. Add cumin seeds and let them splutter for a few seconds.

- Add chopped onions to the skillet and sauté until they turn translucent.

- Stir in the minced garlic and green chilies, and cook for another minute until fragrant.

- Add diced potatoes to the skillet, along with turmeric powder, coriander powder, red chili powder, garam masala, and salt. Mix well, ensuring the potatoes are coated evenly with the spices.
