Recipe - Super Warming Chai Spiced Coconut Milk

Chai spiced coconut milk is a comforting, fragrant, and warming drink, perfect for chilly days or when you need a cozy pick-me-up. Blending the richness of coconut milk with aromatic spices creates a delightful beverage that's both soothing and invigorating.

Ingredients

2 cups coconut milk (unsweetened)
2 teaspoons loose leaf black tea (or 2 black tea bags)
1 cinnamon stick
4-5 whole cloves
4-5 green cardamom pods (slightly crushed)
1-inch fresh ginger (sliced)
2-3 tablespoons honey or sweetener of choice (adjust to taste)
Optional: a pinch of black pepper for added warmth

Method

- In a saucepan, pour the coconut milk and add the spices - cinnamon stick, cloves, cardamom pods, and fresh ginger.

- Heat the mixture over medium heat until it begins to simmer. Once it starts simmering, reduce the heat and let it gently simmer for about 5 minutes. This allows the spices to infuse their flavors into the coconut milk.

- Add the black tea to the simmering mixture. If using tea bags, simply drop them into the saucepan. Let the tea steep for about 3-4 minutes. Adjust the steeping time depending on how strong you prefer your tea.
