* MANGO AND AVOCADO SALAD
Ingredients· mango, one, cubed
· green lettuce, one
· avocado, one, cubed
· red onions, 2 nos., diced
· balsamic vinegar, 1 tsp
· lime juice, 2 tsp
· olive oil, 2 tsp
· green chilli, sliced, 1 tsp
· black pepper, ¼ tsp, crushed
· salt to taste
Method:
- Combine the mango, lettuce, avocado and red onions in a bowl
- Make the dressing by mixing the vinegar, lime juice and olive oil together
- Season it with black pepper and salt
- Add the salad dressing over the mango and avocado chunks
- Toss it gently and serve.
* GRILLED PRAWNS AND MANGO WITH SAUCE
Ingredients· fresh prawns, 8 pieces, medium-sized
· fresh mango paste, 2 tbsp
· lime juice, 2 tbsp
· ginger-garlic paste, 2 tbsp
· red chilli flakes, a pinch
· black pepper, ¼ tsp, crushed
· fresh cream, 20 ml
· salt to taste
Method- Fold the prawns with the remaining ingredients to combine well
- Leave the mix to marinate overnight
- Pre-heat a grill to medium-high heat
- Place the prawns on the grill and discard the excess marinade
- Grill it for 4–6 minutes and serve hot with a dip or sauce of your choice.
