1 teaspoon cumin seeds
1 teaspoon ginger-garlic paste
1/2 teaspoon turmeric powder
1 teaspoon coriander powder
1 teaspoon garam masala
Salt to taste
Fresh coriander leaves, chopped (for garnish)
Water

Method

- In a large mixing bowl, combine crumbled paneer, mashed potatoes, sautéed mixed vegetables, ginger-garlic paste, green chilies, garam masala, turmeric powder, coriander powder, and salt.

- Mix the ingredients thoroughly until a uniform mixture is formed.

- Divide the mixture into equal portions, flattening each portion on your palm.

- Place a hard-boiled egg in the center of each portion and carefully shape the mixture around the egg, ensuring it is completely covered.

- Roll each kofta in bread crumbs, ensuring an even coating.

- Heat oil in a pan over medium heat. Once hot, gently place the koftas in the oil.

- Fry the koftas until they turn golden brown and crispy on all sides. Place them on a paper towel to drain excess oil.

- In another pan, heat a little oil and add cumin seeds. Let them splutter.

- Add ginger-garlic paste and sauté until golden brown.

- Lower the heat and add yogurt, turmeric powder, coriander powder, garam masala, and salt. Cook the masala until the oil starts to separate from the mixture.

- Add water to achieve the desired consistency for the curry. Let it simmer for a few minutes.

- Carefully slice the koftas in half and arrange them on a serving platter.

- Pour the flavorful curry over the koftas, ensuring they are generously coated.

- Garnish with fresh coriander leaves to enhance the visual appeal and flavor of the dish.

- Serve the Vegetarian Nargisi Kofta hot with naan, roti, or steamed rice, and relish the exquisite flavors of this culinary masterpiece.
