The historically rich land of Bihar is diverse and awesome. Bihar is equally famous for the plethora of scrumptious and exotic delicacies. The constants are rice, roti, achar, chatni, dals and milk products. Bihari cuisine is predominantly vegetarian because of the influence of Buddhism and Hinduism beliefs. * Litti Chokha

Litti Chokha consists of wheat and sattu with spices, kneaded into round spicy balls, dipped in ghee. Chokha is prepared by mashing boiled vegetables adding spices and chopped onion and served with Litti as a complimentary delicacy.

* Kadhi badi

This one is a staple delicacy for the Biharis. Both Kadhi and badi are prepared from besan. The gravy also consists of yoghurt. It is usually complimented with rice and/or puris.

* Chana Ghugni

Chana Ghughni is extremely common in the state as a Sunday breakfast special. It is made with boiled Bengal gram, fried with onion and spices along with Chuda ka bhuj (flattened rice). Flattened and dried gram is also used to make other salty snacks.

* Parwal ki Mithai

It is made by stuffing pointed gourd with khoya. The inner pulp of the parwal is scooped out, bolied, dipped in syrup and filled with sweet khoya preparation.

* Balushahi

Balushahi are donut lookalikes made from flour and buttermilk. The sweet is filled with mildly sweetened khoya and spices like cardamom and cinnamon, sometimes even flavoured with the opulent saffron for added taste.
