Ingredients
2 ripe bananas
1 cup all-purpose flour
1 tablespoon sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup milk (or your preferred plant-based milk)
1 tablespoon vegetable oil
1 teaspoon vanilla extract
Butter or oil for cooking
Method
- Start by peeling the ripe bananas and placing them in a mixing bowl. Use a fork or potato masher to mash the bananas until they are smooth and creamy.
- In a separate bowl, whisk together the all-purpose flour, sugar, baking powder, baking soda, and salt.
- To the mashed bananas, add the milk, vegetable oil, and vanilla extract. Mix well to combine.
- Gradually add the dry ingredients to the wet ingredients while stirring. Mix until you have a smooth batter. Be careful not to overmix; a few lumps are perfectly fine.
- Place a non-stick griddle or frying pan over medium-high heat and let it preheat. You can test if it's hot enough by sprinkling a few drops of water on the surface. If they sizzle and evaporate, it's ready.
- Add a small amount of butter or oil to the griddle or pan and spread it evenly. Pour 1/4 cup of pancake batter onto the hot surface for each pancake. Cook until you see bubbles forming on the surface and the edges start to set, usually about 2-3 minutes.
- Carefully flip the pancakes with a spatula and cook for an additional 1-2 minutes on the other side or until they are golden brown and cooked through.
- Transfer the cooked pancakes to a serving plate. You can keep them warm in a preheated oven while you cook the remaining pancakes.
- Serve your eggless banana pancakes with your favorite toppings like sliced bananas, maple syrup, honey, or a dusting of powdered sugar.
