How long has it been since you had a cup of desi ghee in one sitting? Have you ever sat yourself and extracted chutney of the fruit called Kachri? Don’t be baffled if you haven’t, because that’s not something most people living in the cities do. The food that’s prepared in a traditional agrarian kitchen maintains popularity only in close proximity of the region where the grains and produce are easily available. Haryana food is every bit basic and rich in tradition as it is delicious and there is lot you can take away from a meal of Haryanawi cuisines.
* Kair Sangri Ki Sabji
Kair (or ker) is a dried desert bean used to cook the Kair Sangri Ki Sabji. The vegetable curry is really delicious and is cooked with spices to add flavour. The stir fry beans are first soaked overnight before preparing the dish.
* Besan Ki Masala Roti
Like the chila from Gujarat, Haryana too has a besan based bread. This roti is dolled out of dough made using besan and spiked with chilli powder, cumin and amchur.
* Mixed Dal
This protein rich recipe is good for both the taste buds and the health of people who love dal! Back in Haryana, this dal is prepared with a mix of chana, masoor and moong dal cooked with spices and a generous amount of ghee.
* Hara Dhaniya Chholia
Hara shaniya chholia is an authentic Haryanawi delicacy. The spicy dish is prepared with other vegetables, ground spices and chholia. It’s a curry dish and can be had both with rice and roti.
