4 Quick Breakfast Recipes For Working Women

Are you a working women looking for healthy and instant breakfast recipes? If yes, you have come to the right place. I have compiled 4 quick and easy recipes which include bread recipes, poha recipes, South Indian breakfast recipes, Instant dosa recipes, oats recipes and upma recipes. These recipes will save you a lot of time in the morning and make your time in the kitchen, a pleasurable one. I know many working women who have to start from home early in the morning to reach the office at 9 am.They have very limited time to prepare breakfast for the family and also pack lunch for themselves and their family. In order to help them and to make their time in the kitchen less hectic, I just chosen 4 quick and instant Indian recipes and have also given few cooking tips for working women.

# Onion Rava Dosa

Rava dosa is a very popular South Indian Breakfast which is very easy to prepare. I have already posted rava dosa here, this is another recipe of rava dosa from my mother’s kitchen. It is an instant recipe and needs no prior planning. It is very tasty, crispy and instant but you need a little skill to prepare this dosa.

Ingredients


Rice flour – 1 1/2 cup
Rava – 1/2 cup
Maida / all pupose flour – 2 tbsp
Jeera / cumin seeds – 1 1/2- 2 tsp
Whole black pepper – 1 tsp
Green chilli / Hari Mirch -1 very finely chopped
Thick Buttermilk – 1/4 cup
Onion / Pyaj -1
Water - appoximately 2 3/4 cup
Oil for making dosas
Salt / Namak as needed

Method

- Mix rava in 1/4 cup buttermilk and leave it for 15-30 minutes.Chop onions and green chillies very finely.

- In a bowl, mix together rice flour, all purpose flour, cumin seeds, whole black pepper, green chillies and salt needed. Add the rava + butter milk mix to it. Then add approximately 2 3/4 cup of water to it little at a time and mix it well so that there are no lumps.Check for salt. Add if required.

- First heat a non stick tawa or a cast iron tawa, sprinkle little onions on top of it. Do not add too much onions as you will have difficulty in removing the dosa from the tawa.

- After mixing it, take a ladle or a small cupful of batter and fill the outer corners of the tawa.

- Then fill in big gaps if any (picture-3). See how lacy and beautiful it is. To make it easier to understand, I have explained it in 3 easy steps but you can pour the batter at one go following the same method.

- Let the dosa get cooked. Rava dosa will take longer time to get cooked than normal dosa, so do not be in a hurry to flip over the dosa. Drizzle a tsp of oil around the dosa.Let the dosa get cooked evenly on all sides.(You can adjust or move the tawa if needed). Wait until the bottom turns nice golden brown and the corners start lifting up slightly.

- Once the bottom turns golden brown, flip over to the other side. Drizzle another 1/2 tsp of oil around the dosa. Let the other side also get cooked.

# Oats Dosa

We all know that oats is a very healthy and nutritious food. Oats has many vital nutrients such as vitamins, fiber and minerals. If you are bored of having oats porridge everyday, for a change you can make this dosa. The advantage is that, you do not have to grind or plan ahead as you do for regular dosa. This dosa can be made in a jiffy.
Ingredients

1 cup Any Instant Oats
1/4 cup Rice flour (or 3 tbsp)
1/4 cup Semolina / rava (or 3 tbsp)
1/4 cup Buttermilk
1 Green Chilli / Hari Mirch (finely chopped)
1 tbsp Coriander leaves / Hara Dhania (finely chopped)
1 tsp Cumin seeds / Jeera
1/4 tsp Pepper Powder
Salt / Namak (as needed)
Sesame seed oil for making dosas

Method

- Dry grind the oats just for a few seconds.

- Mix all the above ingredients except oil, to a dosa batter consistency adding needed water. Let it sit for 15 minutes.

- Heat a non stick tawa, pour a ladle of batter and spread it lightly in a circular motion as you do for normal dosa.

- Drizzle a tsp of oil around the dosa. Make small dosas otherwise, you will not be able to flip over the dosa.

- Keep it on medium flame and cook the dosa. Do not be in a hurry to flip over the dosa. Let it get cooked well.

- When it is cooked, flip it over to the other side. Do it carefully, as this dosa will be very soft.

- After the other side is cooked, remove from heat and serve hot with any chutney or sambar. Repeat the process for the rest of the batter.

- For this, you have to make a watery batter. Instead of spread it, pour the batter from the outside of the tawa. Drizzle oil all around the dosa. Once corners starts to lift up, flip it over to the other side.

# Kande Pohe

Kande Pohe is a very popular Maharashtrian breakfast, which can also be had as an evening snack. Breakfast is the most important meal of the day, so it is not advisable to skip breakfast due to lack of time. I always have aval or poha at home as it comes handy when we need a quick breakfast. It is healthy and takes only 10-15 minutes to prepare this dish.

Ingredients

Poha /flattened rice/aval -1 cup
Onion -1 / pyaj
Green chilli / hari mirch -1 finely chopped
Turmeric powder / haldi powder – a pinch
Fresh Lemon juice to taste
Oil – 1 tbsp
Mustard seeds – 1 tsp
Cumin seeds / jeera – 1/2 tsp
Roasted peanuts – 2-3 tbsp
Asafoetida / hing – a pinch
Curry leaves – few
Fresh grated coconut
Finely chopped coriander leaves

Method

- Wash poha in water 2-3 times and drain it in a colander. Let it sit for 5-10 minutes. It will become soft by that time. Fluff it with a fork and keep it aside.Finely chop onion and green chillies.

- Heat oil in a kadai, add mustard seeds, when it splutters, add cumin seeds, roasted peanuts, hing and curry leaves. Saute for 2-3 seconds.

- Then add onions, green chilli and saute until onions turn transparent. Add turmeric powder and salt needed.

- Add poha, sprinkle a little water and cook for 2-3 minutes covered.

- Remove from heat and add lemon juice to taste. Garnish with coriander leaves, fresh grated coconut and serve hot.

# Bread Upma

Are you bored of bread toast and bread sandwiches, then this South Indian Style bread upma is for you.This is a very tasty and delicious breakfast that can be make in a few minutes time. It can be prepared with left over bread also. Even those who do not like upma will love this bread upma. Today we will learn how to make bread upma following this easy recipe.

Ingredients

Bread – 5 slices (brown or white bread)
Onion / pyaj- 1 big or 2 medium
Tomato / tamatar – 2
Green chilli – 2 slit
Ginger / adrak -1/2 tsp finely chopped
Turmeric / haldi powder – a pinch
Sambar powder – 1 tsp
Ghee or oil – 2 tsp for frying bread
Salt / namak to taste
Oil – 2 1/2 tsp
Mustard seeds – 1/2 tsp
Curry leaves – few

Method


- Cut bread into squares or tear it into small pieces. Heat 2 tsp of ghee and roast the bread until golden brown. Switch off and let the bread be in the heat of the pan.

- Heat oil in a pan, add mustard seeds, when it splutters, add onions, ginger, green chillies, curry leaves and saute until onions turn transparent.

- Then add chopped tomatoes, turmeric powder, sambar powder, salt needed and cook until tomatoes are soft. Add 2 tbsp of water, if your tomato is not very juicy.

- Then add bread pieces and toss until bread is well coated with the masala.

- Serve hot.You do not need any side dish for this upma. You can have this even as a tea time snack.
