Method

- Heat a tablespoon of ghee in a heavy-bottomed pan or kadhai over medium heat.

- Add the grated potatoes and beetroot to the pan and sauté them for 8-10 minutes until they turn soft and tender.

- In a separate saucepan, heat the milk until it comes to a gentle boil.

- Pour the boiled milk over the sautéed potatoes and beetroot mixture.

- Stir well and let the mixture simmer on low heat until the milk is absorbed and the mixture thickens.

- Add sugar to the mixture and continue to cook, stirring occasionally, until the halwa reaches a desired consistency.

- In another small pan, heat the remaining ghee and roast the chopped nuts until golden brown.

- Add the roasted nuts, cardamom powder, and saffron strands (if using) to the halwa mixture and mix well.

- Cook for another 2-3 minutes, allowing the flavors to blend.

- Remove the halwa from heat and transfer it to a serving dish.

- Garnish with desiccated coconut for added texture and flavor.

- Serve hot or cold, as desired.
