Bananas, chocolate, and cardamom are a match made in culinary heaven. Ingredients
2 ripe bananas, mashed
1/4 cup honey or maple syrup (for a vegan option)
1/4 cup coconut oil, melted
1 teaspoon vanilla extract
2 cups rolled oats
1/2 cup almond flour or whole wheat flour
1/4 cup unsweetened shredded coconut
1/4 cup dark chocolate chips or chunks
1 teaspoon ground cardamom
1/2 teaspoon cinnamon
1/4 teaspoon salt
Method
- Preheat your oven to 350°F (175°C) and line a baking dish or tray with parchment paper.
- In a large mixing bowl, combine the mashed bananas, honey or maple syrup, melted coconut oil, and vanilla extract. Mix until well combined.
- Add the rolled oats, almond flour or whole wheat flour, shredded coconut, dark chocolate chips or chunks, ground cardamom, cinnamon, and salt to the bowl. Stir until all the ingredients are evenly incorporated and form a thick batter.
- Transfer the batter into the lined baking dish or tray. Use a spatula or the back of a spoon to press the batter down firmly, ensuring it is spread evenly.
- Bake in the preheated oven for 25 to 30 minutes or until the edges turn golden brown and a toothpick inserted into the center comes out clean.
- Remove from the oven and let it cool completely in the baking dish or tray. This will allow the oatmeal bars to firm up.
- Once cooled, carefully lift the bars out of the dish or tray using the edges of the parchment paper. Place them on a cutting board and cut into desired bar shapes and sizes.
- Serve and enjoy the banana, chocolate, and cardamom oatmeal bars as a delightful breakfast or snack option.
Storage:
Store the muesli bars at room temperature in an airtight container for up to five days. You may also individually wrap them for easy transport or freeze them for longer-term preservation.
