Recipe - Biscotti: The Perfect Pairing For Your Coffee

Biscotti, the delightful Italian cookies known for their twice-baked goodness, have become a beloved treat worldwide. With their crisp texture and irresistible flavors, biscotti are the perfect pairing for your morning coffee or afternoon tea. Ingredients
Note: This recipe yields about 24 biscotti.
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon pure vanilla extract
1/2 cup whole almonds, toasted and roughly chopped
Method
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a medium-sized bowl, sift together the all-purpose flour, baking powder, and salt. Sifting ensures a smooth, lump-free dough.
- In a separate large mixing bowl, cream together the softened unsalted butter and granulated sugar until the mixture is light and fluffy.
- Add the eggs and pure vanilla extract to the butter-sugar mixture. Beat until well combined.
- Gradually add the sifted dry ingredients to the wet mixture. Mix until a dough forms. It may seem crumbly at first, but keep mixing until it comes together.
- Fold in the toasted and chopped whole almonds. These will add a delightful crunch to your biscotti.
- Divide the dough in half. On a floured surface, shape each half into a log about 12 inches long and 2 inches wide. Place them on the prepared baking sheet, leaving space between them.
- Bake in the preheated oven for about 25 minutes or until the logs are firm and slightly golden.
- Allow the baked logs to cool on a wire rack for about 10 minutes.
-: Using a serrated knife, slice the logs into 1/2-inch-wide biscotti. Lay them flat on the baking sheet and return them to the oven for an additional 10-15 minutes, or until they become golden and crisp.
- Once baked, transfer the biscotti to a wire rack to cool completely. Store them in an airtight container. Enjoy them dipped in your favorite coffee or tea!
