Ingredients
200 grams paneer (cottage cheese), crumbled
3-4 tablespoons stevia or any sugar substitute of your choice
2 tablespoons unsweetened cocoa powder
1/4 teaspoon cardamom powder
A pinch of saffron strands (optional)
Chopped nuts for garnishing (almonds, pistachios, etc.)

Method
- Begin by crumbling 200 grams of paneer (cottage cheese) in a mixing bowl. You can either use store-bought paneer or make it at home.
- Use a spoon to mash the paneer until it becomes smooth and free of lumps.
- In a non-stick pan, add the crumbled paneer and cook it on medium heat for a few minutes to remove excess moisture. Stir continuously to prevent sticking.
- Add stevia or your chosen sugar substitute to the paneer and mix well. Keep stirring until the mixture starts to come together.
- Now, add the unsweetened cocoa powder to the paneer mixture. Mix thoroughly to evenly distribute the cocoa flavor.
- If using saffron, soak a pinch of saffron strands in a tablespoon of warm milk. Add this saffron-infused milk to the mixture for a subtle saffron hue and flavor.
- Sprinkle cardamom powder over the mixture for a hint of traditional aroma.
- Continue cooking the mixture on low heat, stirring consistently, until it thickens and leaves the sides of the pan. This should take around 5-7 minutes.
- Turn off the heat and let the mixture cool down slightly.
- Once the mixture is cool enough to handle, divide it into equal portions.
- Shape each portion into small, round sandesh by rolling them gently between your palms.
- Press a chopped nut (almond, pistachio, etc.) onto the top of each sandesh for garnish.
- Your Sugar-Free Chocolate Sandesh is ready to be enjoyed!
