The term "bhuna" refers to the cooking technique of sautéing spices and ingredients until they release their oils, creating a deep, intense flavor. Ingredients for Chicken Bhuna Masala
For the Chicken Marinade:
500g chicken (bone-in or boneless)
2 tablespoons yogurt
1 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon ginger-garlic paste
Salt to taste
For the Bhuna Masala:
2 tablespoons oil or ghee
2 large onions, finely sliced
2 tomatoes, finely chopped or pureed
2 teaspoons ginger-garlic paste
2 green chilies, slit
1 teaspoon cumin seeds
1 bay leaf
1 cinnamon stick
3-4 cardamom pods
1 teaspoon coriander powder
1 teaspoon cumin powder
1 teaspoon garam masala
1 teaspoon red chili powder (adjust to taste)
1 teaspoon turmeric powder
Fresh coriander leaves for garnish
Salt to taste
Water as needed
How to Make Chicken Bhuna Masala
To prepare Chicken Bhuna Masala, start by marinating 500g of chicken with yogurt, turmeric powder, red chili powder, ginger-garlic paste, and salt. Ensure the chicken is well-coated, then cover and refrigerate it for at least 30 minutes to allow the flavors to develop. Meanwhile, heat oil or ghee in a heavy-bottomed pan, add cumin seeds, bay leaf, cinnamon stick, and cardamom pods, and sauté until fragrant. Stir in sliced onions and cook until golden brown.
Add ginger-garlic paste and slit green chilies, sautéing until the raw aroma disappears. Mix in the chopped tomatoes and cook until they soften and the oil begins to separate.
Next, add the marinated chicken to the pan and cook on high heat, stirring frequently, until the chicken is lightly browned. Reduce the heat and season with coriander powder, cumin powder, red chili powder, turmeric powder, and salt.
Stir well, cover, and cook on low heat, stirring occasionally, until the chicken becomes tender and fully cooked. Add water if required to achieve the desired consistency. Once done, sprinkle garam masala over the dish, mix well, and let it simmer for a minute. Garnish with fresh coriander leaves and serve hot with naan, parathas, or steamed rice for a flavorful and aromatic meal.
