Ingredients
500 grams boneless, skinless chicken thighs or breasts
1/4 cup olive oil
3 tablespoons lemon juice
4 garlic cloves, minced
1 tablespoon ground cumin
1 tablespoon ground coriander
1 teaspoon paprika
1 teaspoon ground turmeric
1/2 teaspoon ground cinnamon
Salt and black pepper to taste
Pita bread or flatbreads
Sliced vegetables (lettuce, tomatoes, cucumbers, onions)
Tahini sauce or garlic sauce (optional, for serving)
Method
- In a bowl, combine the olive oil, lemon juice, minced garlic, cumin, coriander, paprika, turmeric, cinnamon, salt, and black pepper. Mix well to create the marinade.
- Add the chicken to the marinade, ensuring it is evenly coated. Let it marinate for at least 15 minutes, or refrigerate for up to 4 hours for enhanced flavor.
- Preheat your grill or stovetop grill pan over medium-high heat.
- Remove the chicken from the marinade and grill it for about 6-8 minutes per side, or until it is cooked through and nicely charred. Alternatively, you can cook the chicken in a preheated oven at 200°C (400°F) for approximately 15-20 minutes.
