1 tablespoon soy sauce
1 tablespoon oyster sauce (optional)
1 cup chicken stock
1/2 cup coconut milk (optional, for a creamy texture)
1 teaspoon sugar

How to Make Chinese Chicken Curry
Begin by marinating the chicken. In a bowl, combine the chicken pieces with soy sauce, cornstarch, and black pepper. Mix well and let it sit for 20–30 minutes to absorb the flavors. While the chicken marinates, prepare the vegetables by slicing the onions, bell peppers, and carrots, and keep them ready for stir-frying.
Heat a tablespoon of vegetable oil in a large pan or wok over medium heat. Add the marinated chicken and stir-fry it until it is lightly browned and cooked through, which should take about 5–7 minutes. Once done, remove the chicken from the pan and set it aside. In the same pan, add another tablespoon of oil, then sauté the garlic and ginger until they release a fragrant aroma.
