Ingredients

3 large ripe mangoes, peeled, pitted, and diced
1 pre-made pie crust (store-bought or homemade)
1/2 cup granulated sugar
1/4 cup cornstarch
1/4 teaspoon salt
1 teaspoon pure vanilla extract
1 tablespoon fresh lemon juice
1/2 teaspoon ground cinnamon
1 tablespoon unsalted butter, diced
Egg wash (1 egg mixed with 1 tablespoon water) for brushing the crust

Method

- Preheat your oven to 375°F (190°C).

-If using a store-bought pie crust, gently place it into a 9-inch pie dish. Press it firmly against the bottom and sides of the dish. If making a homemade crust, roll out the dough on a lightly floured surface, and carefully transfer it to the pie dish. Trim the edges and crimp them for a decorative finish.

- In a large mixing bowl, combine the diced mangoes, granulated sugar, cornstarch, salt, vanilla extract, lemon juice, and ground cinnamon. Gently toss the ingredients until the mangoes are evenly coated with the sugar and spices.

- Pour the mango filling into the prepared pie crust. Evenly distribute the diced butter over the top of the filling.

- You can leave the pie open-faced or create a lattice crust by cutting the remaining pie dough into strips and weaving them in a crisscross pattern over the filling. If you prefer a full crust cover, roll out the remaining dough and place it over the filling, sealing the edges with the bottom crust.

- For a beautifully golden and glossy crust, brush the top of the pie with the egg wash.

- Place the pie in the preheated oven and bake for 40-45 minutes, or until the crust is golden brown and the mango filling is bubbling.
