Ingredients
2 cups of cooked rice (preferably chilled or day-old rice)

4 cloves of garlic, minced

2 tablespoons of soy sauce
1 tablespoon of oyster sauce (optional)
1 tablespoon of sesame oil
1 tablespoon of vegetable oil
Salt and pepper to taste
Fresh cilantro or green onions for garnish (optional)
Method
- Heat vegetable oil in a large pan or wok over medium-high heat.
- Add minced garlic to the pan and sauté for about a minute until fragrant.
- Add chopped onions and sliced mushrooms to the pan. Stir-fry for 3-4 minutes until the mushrooms are tender and slightly golden.
- Push the mushrooms and onions to one side of the pan and add chilled or day-old rice to the other side. Break up any clumps of rice with a spatula.
- Drizzle soy sauce and oyster sauce (if using) over the rice. Mix well to combine the rice with the mushrooms and onions.
- Cook for an additional 3-4 minutes, stirring frequently, until the rice is heated through and well-coated with the sauces.
- Add sesame oil to the pan and season with salt and pepper to taste. Mix everything together thoroughly.
- Remove the pan from heat and garnish with fresh cilantro or green onions (if desired).
