Recipe - Try Out This Non-Veg Dish Pakistani Maharani Chicken Karahi

Pakistani cuisine is known for its rich flavors and aromatic spices, and one dish that stands out is the mouthwatering Maharani Chicken Karahi. This delectable non-vegetarian dish hails from the region of Punjab in Pakistan and is a favorite among food enthusiasts. In this article, we will guide you through the process of preparing this flavorful and royal chicken karahi recipe.
Ingredients
1 kg chicken, cut into medium-sized pieces
3 tablespoons ghee (clarified butter) or cooking oil
2 onions, finely chopped
2 tomatoes, pureed
3-4 green chilies, slit lengthwise
1 tablespoon ginger-garlic paste
1 teaspoon cumin seeds
1 teaspoon coriander seeds
1 teaspoon red chili powder (adjust to taste)
1 teaspoon turmeric powder
1 teaspoon garam masala powder
1 teaspoon dried fenugreek leaves (kasuri methi)
Salt to taste
Fresh coriander leaves for garnishing
Method
- Heat ghee or oil in a large cooking pan or karahi over medium heat. Add cumin seeds and coriander seeds. Sauté until they start to crackle and release their aroma.
- Add chopped onions to the pan and sauté until they turn golden brown.
- Add ginger-garlic paste and cook for a minute until the raw smell disappears.
- Now, add the chicken pieces to the pan and cook on high heat until they are lightly browned on all sides. Stir occasionally to ensure even cooking.
- Reduce the heat to medium-low and add pureed tomatoes, red chili powder, turmeric powder, and salt. Mix well to coat the chicken with the spices.
- Cover the pan and let the chicken cook in its own juices for about 15-20 minutes or until it is tender and cooked through. Stir occasionally to prevent sticking.
- Once the chicken is cooked, add slit green chilies and garam masala powder. Mix well and cook for an additional 2-3 minutes.
- Crush the dried fenugreek leaves between your palms and sprinkle them over the chicken karahi. This adds a delightful aroma and flavor to the dish.
- Garnish with fresh coriander leaves.
- Serve the Maharani Chicken Karahi hot with naan, roti, or steamed rice.
Note: You can adjust the spice levels according to your preference by adding more or fewer green chilies and red chili powder.
