Ingredients
2 cups of basmati rice
4 cups of water
1 onion, chopped
2 cloves of garlic, minced
1 teaspoon of cumin seeds
1 teaspoon of coriander seeds
1 cinnamon stick
4 cardamom pods
4 cloves
2 tablespoons of vegetable oil
Salt to taste
Optional: 1/2 cup of peas or diced carrots
Method
- Rinse the basmati rice in cold water until the water runs clear. Soak the rice in water for 30 minutes.
- In a large pot, heat the vegetable oil over medium heat. Add the cumin seeds, coriander seeds, cinnamon stick, cardamom pods, and cloves. Cook for 1-2 minutes until fragrant.
- Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
- Drain the soaked rice and add it to the pot. Stir well to coat the rice with the spices and onion mixture.
- Add 4 cups of water to the pot and stir in the salt. If using peas or diced carrots, add them to the pot.
- Bring the water to a boil, then reduce the heat to low and cover the pot. Cook the rice for 15-20 minutes until the water is absorbed and the rice is cooked through.
- Remove the pot from the heat and let it sit covered for 5-10 minutes.
- Fluff the rice with a fork and remove the cinnamon stick and cardamom pods before serving.
