Ingredients
200 grams flat rice noodles (commonly known as atho noodles)
1 cup shredded cabbage
1 cup julienned carrots
1 cup bean sprouts
1/2 cup thinly sliced onions
1/2 cup chopped green onions (scallions)
2 tablespoons soy sauce
2 tablespoons tamarind pulp
2 tablespoons chili oil or chili flakes (adjust to taste)
1 tablespoon crushed garlic
1 tablespoon toasted sesame seeds
Salt to taste
Lime wedges, for garnish
Method
- Cook the flat rice noodles according to the package instructions. Once cooked, drain and rinse them under cold water to prevent sticking. Set aside.
- In a large mixing bowl, combine the shredded cabbage, julienned carrots, bean sprouts, sliced onions, and chopped green onions.
- In a separate bowl, whisk together the soy sauce, tamarind pulp, chili oil or chili flakes, crushed garlic, and salt until well combined.
- Pour the dressing over the vegetable mixture and toss to coat the vegetables evenly.
- Add the cooked flat rice noodles to the vegetable mixture and gently mix everything together until well combined.
