Preparation Time: 10 minutes
Cooking Time: 15-20 minutes
Ingredients
4 boneless, skinless chicken breasts
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon paprika
1/2 teaspoon salt (adjust to taste)
1/4 teaspoon black pepper (adjust to taste)
Juice of 1 lemon (optional, for extra flavor)
Fresh herbs (such as rosemary or basil) for garnish (optional)
Method
- Start by preheating your grill to medium-high heat. If you're using a charcoal grill, make sure the coals are hot and covered with ash before cooking.
- While the grill is heating up, prepare the chicken breasts. Rinse them under cold water and pat them dry with paper towels.
- Place each chicken breast between two sheets of plastic wrap or parchment paper. Using a meat mallet or a rolling pin, gently pound the chicken to an even thickness of about 1/2 to 3/4 inch. This helps ensure even cooking.
- In a small bowl, mix together the olive oil, minced garlic, dried oregano, dried thyme, paprika, salt, and black pepper. You can also add a squeeze of fresh lemon juice for extra flavor.
- Brush the chicken breasts with the seasoning mixture, making sure to coat them evenly on both sides.
- Place the seasoned chicken breasts on the preheated grill grates. Close the grill lid and cook for about 6-8 minutes per side, or until the internal temperature of the chicken reaches 165°F (74°C) and the chicken is no longer pink in the center.
- Cooking times may vary depending on the thickness of the chicken breasts and the heat of your grill, so it's essential to use a meat thermometer to ensure they are fully cooked.
- Once the chicken reaches the desired temperature, remove it from the grill and let it rest for a few minutes. This allows the juices to redistribute, resulting in a more tender and juicy chicken breast.
- Garnish with fresh herbs if desired, and serve hot. Grilled chicken breast pairs wonderfully with a variety of side dishes, from grilled vegetables to rice or a crisp salad.
