Ingredients
500 grams boneless chicken, cut into bite-sized pieces
1 cup fresh coriander leaves (cilantro), chopped
1/2 cup fresh mint leaves, chopped
2 green chilies, chopped
4 cloves garlic, minced
1-inch piece ginger, grated
1 tablespoon lemon juice
1 tablespoon Greek yogurt
1 teaspoon cumin powder
1 teaspoon coriander powder
1/2 teaspoon turmeric powder
1/2 teaspoon garam masala
1/2 teaspoon red chili powder (adjust according to spice preference)
Salt to taste
2 tablespoons oil for basting
Lemon wedges and fresh mint leaves for garnish
Method
- In a blender or food processor, combine the coriander leaves, mint leaves, green chilies, garlic, ginger, lemon juice, Greek yogurt, cumin powder, coriander powder, turmeric powder, garam masala, red chili powder, and salt. Blend until you have a smooth paste.
- In a mixing bowl, place the chicken pieces and add the prepared green marinade. Coat the chicken pieces thoroughly with the marinade, ensuring they are evenly coated. Cover the bowl and let the chicken marinate in the refrigerator for 1-2 hours to allow the flavors to penetrate.
- Preheat the grill or oven to medium-high heat. If using a grill, lightly oil the grates to prevent sticking.
- Thread the marinated chicken pieces onto skewers, leaving a small gap between each piece.
- Place the skewers on the grill or in the oven and cook for approximately 15-20 minutes, turning the skewers occasionally to ensure even cooking. Baste the chicken with oil during the cooking process to keep it moist and flavorful.
- The chicken is done when it is cooked through and has a slight char on the edges.
- Remove the skewers from the grill or oven and let them rest for a few minutes.
