Recipe- Healthy To Eat Suji Uttapam

You are tired and kids are screaming for food. You do not have anything ready and you don’t want to feed them fast food. I don’t know about you but this happens a lot to me.If I have to make a list of my favorite dishes that can be prepared in a jiffy these pancakes will surely top the list. Suji Uttapam or Semolina Pancake is a healthy version of a traditional South Indian recipe eaten with relish in India.
Ingredients
2 cups semolina (suji)
1 cup curd(yogurt)
½ tsp red chili powder
Salt to taste
1 green chili chopped
1 tsp grated ginger
½ cup diced tomato and capsicum
½ cup grated onions, carrots, and cabbage
oil for cooking
Method
- Mix all the ingredients except oil and make a batter of dropping consistency using water.
- Heat a non-stick pan and grease it lightly with oil. Spread a layer of batter on the pan to make a pancake of 3-4 mm thickness.
- Spread a little oil around the pancake to keep it from sticking to the pan.
- Cook it over a slow flame until the base is golden brown. Turn over to cook the other side.
- Remove from the pan and serve hot. Repeat with the remaining batter to make five more pancakes.
