Holi Recipe- Khajoor Anjeer Rolls To Welcome Guests

Anjeer Khajoor Rolls are most healthy sweet that you can indulge in this Festival Season. Natural sweetness from fig, dates with nuts and poppy seeds rolled on this dessert, makes it a guilt free dessert. Anjeer Khajoor Roll is easy to make recipe ,with no added sugar and vegan too. Soak ANjeer and khajoor in warm water ,drain water ,blend to fine paste . Mix it well with nuts and cook .
Ingredients
75 grams Dried Figs / Anjeer or 8-10 Figs
100 grams Dates deseeded or 12-15 dates
5- No Almonds
10 No Pista
5 No Cashews
4-5 drops Lime Juice
½ Tbsp Poppy seeds
1 Tbsp Ghee / Clarified Butter
Method
* Deseed dates , soak fig and dates in warm water for 30-60 minutes.
* After 30 minutes, drain water ( don't waste it , you can drink it as it tastes really sweet) and add soaked dates and fig to a blender and blend to a very fine smooth paste without adding water.
* Soak Pista and almond on warm water for 15-20 minutes, peel the skin and chop pista and almonds. Chop cashews also and set aside.
* In a nonstick pan, add ½ Tbsp of Poppy seeds and dry roast well till you get nice aroma and keep it aside.
* Heat 1 Tbsp of Ghee/ Clarified Butter in a nonstick pan and add chopped nuts ,fry well for 2-3 minutes on medium heat but it shouldn't change colour.
* Now add blended fig-dates paste , mix well and cook for about 15-20 minutes , stirring in between.Add 3-4 drops of lime juice and mix well.
* Cook Fig Dates mixture till it is really heavy to stir or else you can cut into pieces ,it becomes sticky. Turn of the heat and allow to cool.
* Once it becomes warm and able to handle the temperature ,grease palms with ghee , just roll into a cylindrical shape.
* Roll this fig dates log on roasted poppy seeds. Cover it with butter paper or aluminum foil and refrigerate for 4-5 hrs to set.
* Then remove from refrigerator , cut into circles and serve.
