Ingredients (for two sandwiches):

8 oz (about 225g) ribeye steak, thinly sliced
1 medium onion, thinly sliced
1 green bell pepper, thinly sliced (optional)
4 slices of provolone cheese
2 soft Italian rolls or hoagie rolls
2 tablespoons vegetable oil
Salt and pepper (to taste)

Method

- Place the ribeye steak in the freezer for about 20-30 minutes. This makes it easier to slice thinly. Afterward, remove it from the freezer and slice it as thin as possible against the grain. Season the slices with salt and pepper.

- In a skillet over medium-high heat, add 1 tablespoon of vegetable oil. Once hot, add the sliced onions (and bell peppers, if using). Sauté until they become soft and caramelized, which should take about 5-7 minutes. Remove them from the skillet and set aside.

- In the same skillet, add another tablespoon of vegetable oil. Place the thinly sliced steak into the skillet in an even layer. Allow it to cook for about 2-3 minutes without stirring to develop a nice sear. Then, flip the steak slices and cook for an additional 2-3 minutes or until they're no longer pink. You can break them up with a spatula as they cook.

- While the steak is still in the skillet, place the sautéed onions (and bell peppers) on top of the steak. Lay the slices of provolone cheese over the onions and steak. Cover the skillet for a minute or so until the cheese melts and everything melds together.

- While the cheese is melting, you can toast your Italian or hoagie rolls in the oven or on a skillet. This step is optional but adds a nice crunch to the sandwich.

- Carefully scoop up the cheesy, steak, and onion mixture and place it onto the toasted rolls.
