Ingredients
12 oz (340g) pasta (penne, fusilli, or your preferred choice)
2 tablespoons olive oil
3 cloves garlic, minced
1 small red onion, finely chopped
1 red bell pepper, julienned
1 yellow bell pepper, julienned
1 zucchini, sliced into half-moons
1 cup cherry tomatoes, halved
1 cup fresh spinach leaves
1/4 cup fresh basil leaves, torn
Salt and black pepper to taste
Grated Parmesan cheese for garnish
Method
- In a large pot of salted boiling water, cook the pasta according to the package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped red onion. Sauté for a couple of minutes until fragrant and slightly softened.
- Incorporate the julienned red and yellow bell peppers, and the sliced zucchini to the skillet. Cook for about 5 minutes, stirring occasionally, until the vegetables are tender yet still crisp.
- Add the halved cherry tomatoes to the skillet and cook for an additional 2 minutes. Then, add the fresh spinach leaves and cook until they are just wilted.
- Gently fold the cooked pasta into the vegetable mixture, ensuring everything is well combined. The vibrant colors of the vegetables will beautifully complement the pasta.
- Season the dish with salt and freshly ground black pepper to taste. Sprinkle torn fresh basil leaves over the pasta for a burst of flavor and aroma.
