Ingredients

1 cup basmati rice
1 cup paneer, cubed
1/2 cup cashews (kaju)
1 large onion, thinly sliced
2-3 green chilies, slit
1 tablespoon ginger-garlic paste
1 teaspoon cumin seeds
2-3 green cardamom pods

1-inch cinnamon stick

Method

Cook the Rice:

- Rinse the basmati rice under cold water until the water runs clear.
- In a large pot, add water and bring it to a boil.
- Add the rinsed rice to the boiling water and cook until it is 70-80% done.
- Drain the rice using a colander and set it aside.

Prepare the Kaju Paneer Pulao:
- Heat ghee or oil in a large skillet or pan over medium heat.
- Add the cumin seeds and let them sizzle for a few seconds.

- Cover the skillet with a tight-fitting lid and cook on low heat for about 10-15 minutes, allowing the flavors to meld and the rice to fully cook.
- Once the rice is cooked and aromatic, remove the skillet from heat.
