1 cup sugar
3 cups water
1/4 cup ghee (clarified butter)

Method

- Heat ghee in a pan over medium heat. Add semolina and roast it until it turns golden brown and releases a nutty aroma. Stir continuously to avoid lumps. This should take about 5-7 minutes. Transfer the roasted semolina to a plate.

- In the same pan, add water and bring it to a boil.

- Gradually add sugar to the boiling water, stirring continuously until it dissolves completely, creating a sweet syrup.

- Slowly add the roasted semolina to the sugar syrup, stirring continuously to prevent lumps from forming.

- Continue stirring over low heat until the mixture thickens and starts to leave the sides of the pan. This should take around 7-10 minutes.

- In a separate small pan, heat a tablespoon of ghee over medium heat.

- Add mixed nuts (cashews, almonds, and raisins) and sauté until they turn golden brown.

- Pour the ghee-nut mixture into the cooked semolina mixture. Add cardamom powder for a delightful aroma and flavor. Mix until well incorporated.

- Garnish the Kesari Bhaat with saffron strands for a pop of color and edible silver foil (varak) for an elegant touch.

- Serve the warm Kesari Bhaat in individual bowls or molds. It can be enjoyed on its own or paired with a scoop of vanilla ice cream for a delightful contrast.
