Ingredients for Khajoor Anjeer Rolls
1 cup Dates (Khajoor) – deseeded and chopped
½ cup Figs (Anjeer) – chopped
½ cup Almonds – roughly chopped
¼ cup Cashews – roughly chopped
¼ cup Pistachios – roughly chopped
2 tbsp Poppy Seeds – for coating
1 tbsp Ghee (Clarified Butter)
1 tsp Cardamom Powder
1 tbsp Chopped Dry Coconut (optional)
1 tsp Chia Seeds or Sesame Seeds (optional, for extra crunch)
How to Make Khajoor Anjeer Rolls
Begin by soaking the chopped dates and figs in warm water for about 10-15 minutes. This will help soften the fruits, making them easier to blend. Drain the excess water and blend the dates and figs into a thick paste using a food processor. In a heated pan, dry roast the chopped almonds, cashews, and pistachios on a low flame for 2-3 minutes. This enhances their flavor and adds a slight crunch to the rolls. Set aside.
In the same pan, add 1 tablespoon of ghee and the blended dates and figs paste. Stir continuously on low heat until the mixture starts to thicken and leaves the sides of the pan, which should take about 4-5 minutes. Once the paste thickens, add the roasted nuts, cardamom powder, and optional coconut or chia seeds. Mix everything well and cook for another 2-3 minutes. Turn off the heat and let the mixture cool slightly.
Once the mixture is cool enough to handle, divide it into portions and roll them into cylindrical shapes using your hands. You can adjust the size of the rolls based on your preference. Spread the poppy seeds on a plate and roll each Khajoor Anjeer roll over the seeds, coating them evenly. This gives the rolls a lovely texture and an added layer of flavor. Place the rolls in the refrigerator for 30 minutes to set. Once chilled, slice them into bite-sized pieces and serve on a festive platter.
