Make Diwali Greener With Broccoli And Spanish Soup

Diwali is all about lights and sweets, but do you how much un-healthy these sweets are? So, to get over those sweets, try this delicious and healthy Broccoli and Spanish Soup.
Ingredients
Broccoli separated into small florets1 Medium size
Baby Spinach leaves1 Bunch
Butter 2 Tbsp
Leeks finely chopped½ cup
Garlic paste1 Tsp
Refined flour1 Tbsp
Vegetable stock2 ½ cups
Milk 1 cup
Saltto taste
White pepperto taste
Nutmeg powderto taste
Creamto garnish
Method
# Melt butter in a deep non-stick pan on medium heat. Add oil to avoid burning of the butter.
# Add leeks and garlic and saute till the leeks turn translucent.
# Add flour and saute for a minute. Add broccoli and spinach leaves and cook for around three minutes.
# Add the stock, bring it to a boil, and cook for five minutes on high heat without covering the pan. Strain and cool the entire mixture.
# Keep the stock aside and blend the broccoli spinach mixture to a fine paste. Mix it again with the stock and add milk to the broccoli spinach paste.
# Put the pan on a high heat, bring to boil and season with salt, white pepper and nutmeg powder.
# Garnish with cream and serve hot.
