Ingredients

1 cup condensed milk
1 cup ricotta cheese
1/2 cup milk powder
1/4 cup heavy cream
1/4 teaspoon cardamom powder
A pinch of saffron strands (soaked in 1 tablespoon of warm milk)
2 tablespoons ghee (clarified butter)

Method

Preparing the Malai Mixture:

- In a heavy-bottomed pan, heat 1 tablespoon of ghee over low heat. Add the condensed milk, ricotta cheese, milk powder, and heavy cream to the pan. Stir the mixture continuously to avoid any lumps.

- Continue stirring the mixture for about 20-25 minutes until it thickens and starts to leave the sides of the pan. The mixture should have a smooth, creamy texture.

Infusing Aromatic Flavors:

- Now, add the cardamom powder and saffron-soaked milk to the mixture. These aromatic spices will lend a heavenly flavor and aroma to the Malai Peda.

- Stir the mixture for another 5 minutes to allow the flavors to infuse properly.

Shaping the Malai Peda:

- Turn off the heat and let the mixture cool for a few minutes. It should be warm enough to handle.
