Recipe - Celebrate Mother's Day With Chocolate Ganache Cake

Ingredients
For the Chocolate Cake:
2 cups all-purpose flour
1 and 3/4 cups granulated sugar
3/4 cup unsweetened cocoa powder
1 and 1/2 teaspoons baking powder
1 and 1/2 teaspoons baking soda
1 teaspoon salt
2 large eggs, at room temperature
1 cup buttermilk, at room temperature
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup hot water
For the Chocolate Ganache:
1 and 1/2 cups heavy cream
12 ounces semi-sweet chocolate, chopped
2 tablespoons unsalted butter, at room temperature
Method
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans, and line the bottoms with parchment paper for easy removal.
- In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add the eggs, buttermilk, vegetable oil, and vanilla extract to the dry ingredients. Mix on medium speed until well combined, scraping down the sides of the bowl as needed.
- Reduce the mixer speed to low and carefully add the hot water to the batter. Mix until smooth and well combined.
- Divide the batter evenly between the prepared cake pans and smooth the tops with a spatula.
- Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
- Remove the cakes from the oven and allow them to cool in the pans for 10 minutes. Then, transfer them to a wire rack to cool completely.
- While the cakes are cooling, prepare the chocolate ganache. In a small saucepan, heat the heavy cream over medium heat until it begins to simmer.
- Place the chopped chocolate in a heatproof bowl. Pour the hot cream over the chocolate and let it sit for 2-3 minutes to soften.
- Add the butter to the chocolate mixture and stir until smooth and glossy.
- Let the ganache cool slightly until it thickens to a spreadable consistency.
- To assemble the cake, place one cake layer on a serving plate or cake stand. Spread a layer of ganache evenly over the top of the cake.
- Place the second cake layer on top and spread the remaining ganache over the top and sides of the cake, creating a smooth finish.
- Refrigerate the cake for at least 30 minutes to allow the ganache to set.
- Before serving, decorate the cake with chocolate curls, sprinkles, or fresh berries for an extra special touch.
