Step 1:
To make these flourless peanut butter chocolate chip cookies, start by preheating your oven to 350°F (175°C) and lining a baking sheet with parchment paper or a silicone baking mat. In a medium-sized mixing bowl, combine 1 cup of peanut butter, 3/4 cup of granulated sugar, 1 large egg, and 1 teaspoon of vanilla extract. Mix until all the ingredients are well incorporated, then fold in 1/2 cup of chocolate chips. Using a tablespoon or small cookie scoop, form dough balls and place them on the prepared baking sheet, spacing them about 2 inches apart.
Step 2:
Gently press down on each ball with a fork to create a crisscross pattern on top. Bake the cookies in the preheated oven for 8-10 minutes, or until the edges are golden brown.
