Whether you're a health-conscious individual or simply looking to try something new, Ragi Nankhatai is a perfect choice. Here's a step-by-step guide on how to prepare these wholesome cookies, along with the estimated preparation and cooking time.
Preparation Time: 15 minutes
Cooking Time: 20 minutes
Makes: Approximately 20 cookies
Ingredients
1 cup ragi flour (finger millet flour)
1/2 cup all-purpose flour (maida)
1/2 cup unsalted butter, at room temperature
1/2 cup powdered sugar
1/4 teaspoon cardamom powder
1 tablespoon chopped almonds or pistachios (optional)
A pinch of salt
Method
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a mixing bowl, combine ragi flour, all-purpose flour, powdered sugar, cardamom powder, and a pinch of salt. Mix well.
- Add the softened butter to the dry ingredients. Using your fingertips, gently rub the butter into the flour mixture until it resembles coarse crumbs.
- Knead the mixture lightly to form a soft dough. If the dough feels too dry, add a teaspoon of milk to bring it together.
- Divide the dough into equal-sized portions and shape them into small balls or flatten them slightly to create cookie shapes.
- Place the cookies on the prepared baking sheet, leaving some space between them.
- Press a few chopped almonds or pistachios on top of each cookie for added flavor and garnish (optional).
- Bake the cookies in the preheated oven for about 18-20 minutes, or until they turn golden brown around the edges.
- Remove the baking sheet from the oven and allow the cookies to cool on a wire rack. They will firm up as they cool.
- Once completely cooled, store the Ragi Nankhatai in an airtight container. They will stay fresh for up to a week.
Ragi Nankhatai offers a guilt-free indulgence with its wholesome ingredients. Ragi flour is rich in fiber, calcium, and essential nutrients, making these cookies a nutritious snack option. The addition of cardamom powder imparts a fragrant aroma, enhancing the overall flavor profile.
