Ingredients
1 medium-sized cauliflower, cut into florets
1 cup sweet corn kernels (fresh or frozen)
2 medium-sized onions, finely chopped
2 tomatoes, pureed
2 green chilies, slit lengthwise
1 tablespoon ginger-garlic paste
1 teaspoon cumin seeds
1 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon coriander powder
1/2 teaspoon garam masala powder
1/2 teaspoon cumin powder
2 tablespoons oil
Salt to taste
Fresh coriander leaves, chopped (for garnish)
Method
- Heat oil in a large pan or kadai over medium heat. Add the cumin seeds and let them splutter.
- Add the finely chopped onions to the pan and sauté until they turn golden brown.
- Now, add the ginger-garlic paste and slit green chilies. Sauté for a minute until the raw smell disappears.
- Add the tomato puree and cook for a couple of minutes until the oil separates from the masala.
- Lower the heat and add the turmeric powder, red chili powder, coriander powder, cumin powder, and garam masala powder. Mix well to combine the spices with the masala.
- Add the cauliflower florets and sweet corn kernels to the pan. Season with salt according to taste. Mix everything together to coat the vegetables with the masala.
- Cover the pan with a lid and let it cook on medium-low heat for about 15-20 minutes or until the cauliflower is cooked through, stirring occasionally.
- Once the cauliflower is tender, remove the lid and increase the heat to dry out any excess moisture in the dish. Stir-fry for another 3-4 minutes until the masala coats the vegetables well.
- Turn off the heat and garnish the Spicy Gobhi Corn Masala with freshly chopped coriander leaves.
- Serve hot with roti, naan, or steamed rice and enjoy the rain with this delicious and spicy monsoon treat!
