Seekh Kabab is a popular Indian and Pakistani dish made with minced meat (usually lamb or beef) mixed with spices and grilled on skewers. The name "seekh" comes from the Urdu word for skewer, and "kabab" refers to the type of grilled meat.
To make seekh kabab, minced meat is mixed with a variety of spices such as ginger, garlic, cumin, coriander, and chili powder. This mixture is then shaped onto long metal skewers and grilled over charcoal or in an oven until the meat is cooked through and has a slightly charred exterior.
Ingredients
500g minced lamb or beef
1 onion, finely chopped
2 tablespoons ginger-garlic paste
2 tablespoons coriander powder
1 tablespoon cumin powder
1 tablespoon red chili powder
1 tablespoon garam masala powder
Salt, to taste
2 tablespoons oil
Metal skewers
Method
- In a large mixing bowl, combine the minced meat, chopped onion, ginger-garlic paste, coriander powder, cumin powder, red chili powder, garam masala powder, and salt.
- Mix well and knead for a few minutes to ensure the spices are evenly distributed.
- Cover the mixture and let it rest for 30 minutes to allow the flavors to develop.
- Preheat your grill or oven to medium-high heat.
- Lightly oil your hands and take a handful of the meat mixture.
- Mold it around a metal skewer in a cylindrical shape, pressing and squeezing the meat gently onto the skewer. Repeat with the remaining mixture and skewers.
- Brush the skewers with oil and grill or bake for about 10-12 minutes, turning occasionally until the kababs are browned and cooked through.
- Remove the kababs from the skewers and serve hot with chutney or raita, naan or rice.
