Falafel with tahini sauce is a delicious and healthy dish that has become popular all over the world. Ingredients
For the falafel
1 cup of dried chickpeas, soaked overnight
1 small onion, chopped
2 cloves of garlic, chopped
1/2 cup of fresh parsley, chopped
1/2 cup of fresh cilantro, chopped
1 teaspoon of cumin
1 teaspoon of coriander
1 teaspoon of salt
1/2 teaspoon of black pepper
1/2 teaspoon of baking soda
Vegetable oil for frying
For the tahini sauce
1/2 cup of tahini
1/4 cup of water
1/4 cup of lemon juice
1 clove of garlic, minced
Salt and pepper to taste
Method
- Drain the soaked chickpeas and rinse them under cold water.
- In a food processor, pulse the chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, salt, black pepper, and baking soda until it forms a coarse paste.
- Transfer the mixture to a bowl and refrigerate for at least 30 minutes.
- In a small mixing bowl, whisk the tahini, water, lemon juice, garlic, salt, and pepper until it becomes a smooth sauce. Add more water if necessary to reach your desired consistency.
- Heat the vegetable oil in a large pot over medium-high heat.
- Form the chickpea mixture into small balls or patties, about 2 tablespoons each.
- Fry the falafel in the hot oil until golden brown, about 2-3 minutes per side. Drain on a paper towel-lined plate.
