Recipe- Delicious Indian Breakfast Bread Upma

Bread Upma is a delicious Indian breakfast recipe made with leftover bread. This quick and easy vegan bread snack recipe is loaded with veggies and can be made in 20 minutes! What is Upma? It is a savory porridge-like meal that's made with roasted semolina/rava, veggies, and spices.

Over time, there have been many variations to Rava Upma and I have even made some of them, like Instant Pot Oats Upma or Quinoa Upma.

Ingredients

20 slices bread
1 tbsp cooking oil
1 tsp mustard seeds
1 tsp cumin seeds
1 tbsp urad dal
1 tbsp chana dal
1/4 tsp asafoetida
4-5 pieces curry leaves optional
1 onion finely chopped
2 jalapeno minced
1 carrot chopped or grated
1-2 tomatoes chopped
Salt
1 tsp turmeric powder
2-3 tbsp cilantro chopped
1 tbsp lime juice

Method

- Prep the bread using any of these methods - Tear bread slices randomly with your hands, Cut them evenly in 1-inch squares or Pulse them in the grinder to resemble crumbs

- Once the bread is ready, chop the veggies and then start making bread upma.

- In a pan, heat oil. Temper mustard seeds and cumin seeds. Once they crackle, add urad dal, chana dal, and asafoetida.

- Add chopped onions and minced jalapeno. Saute till they turn translucent.

- Then add chopped carrots. Continue to saute for 4-5 minutes or till they are cooked.

- Next, add chopped tomatoes along with salt. Cook till they turn soft.

- Once the tomatoes are cooked, add turmeric powder and saute for thirty seconds.

- Then add the bread pieces and salt. Mix it together with the spices and cook for 2-3 minutes.

- Garnish with chopped cilantro and lime juice. Take it off the flame and serve warm.
