Cheesy potato nuggets are a delicious and easy-to-make snack or appetizer that combines the creamy texture of mashed potatoes with the savory taste of cheese. Ingredients
2 cups mashed potatoes (prepared without milk or butter)
1 cup shredded cheddar cheese
1/4 cup all-purpose flour
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon salt
1/4 teaspoon black pepper
2 eggs
1 1/2 cups panko breadcrumbs
Cooking spray
Method
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the mashed potatoes, shredded cheddar cheese, flour, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
- Shape the mixture into small nuggets, about 1 1/2 inches in diameter.
- In a shallow dish, whisk together the eggs.
- In another shallow dish, place the panko breadcrumbs.
- Dip each nugget into the egg mixture, then coat it with the panko breadcrumbs, pressing the breadcrumbs onto the nuggets to ensure they stick.
- Place the nuggets onto a baking sheet sprayed with cooking spray.
- Spray the nuggets lightly with cooking spray.
- Bake in the preheated oven for 20-25 minutes or until golden brown and crispy.
- Serve hot with your favorite dipping sauce.
