Chicken Parmesan Rolls are a delicious twist on the classic Italian-American dish of Chicken Parmesan. These rolls feature tender chicken breasts that are stuffed with a cheesy filling of ricotta, mozzarella, and Parmesan, then rolled up and coated in seasoned breadcrumbs and Parmesan cheese. The rolls are baked until golden brown and crispy, then smothered in marinara sauce and topped with more mozzarella cheese. Ingredients
4 boneless, skinless chicken breasts
1 cup ricotta cheese
1 cup shredded mozzarella cheese, divided
1/2 cup grated Parmesan cheese, divided
1 tablespoon chopped fresh parsley
1 teaspoon dried basil
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup seasoned breadcrumbs
1 cup marinara sauce
Method
- Preheat your oven to 375°F (190°C).
- Place the chicken breasts between two sheets of plastic wrap and use a meat mallet or rolling pin to pound them to an even thickness of about 1/2 inch.
- In a medium bowl, mix together the ricotta cheese, 1 cup of mozzarella cheese, 1/4 cup of Parmesan cheese, parsley, garlic powder, onion powder, basil, salt, and pepper until well combined.
- Spoon the cheese mixture onto each chicken breast, spreading it evenly and leaving about 1/2 inch of space around the edges.
- Starting at one end, roll up each chicken breast tightly and secure with toothpicks or kitchen twine.
- In a shallow dish, mix together the breadcrumbs and remaining 1/4 cup of Parmesan cheese.
- Roll each chicken roll in the breadcrumb mixture, pressing gently to coat evenly.
- Place the chicken rolls in a baking dish and bake for 25-30 minutes, or until the internal temperature reaches 165°F (74°C).
- Remove the dish from the oven and spoon marinara sauce over the chicken rolls, then sprinkle with the remaining 1/2 cup of mozzarella cheese.
- Return the dish to the oven and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
