Recipe- Healthy Sweet Potato Pancakes

Sweet potato pancake, is a healthy pancake prepared by mixing cooked sweet potatoes with the regular pancake batter.
When it comes to sweet potato, I would prefer a spicy pan roasted one (Sweet potato roast) or this pancake. I know both recipes are extremely opposite to each other in taste and cuisines. But you will have to try these both to choose your favorite.
With sweet potatoes, there are many recipes available around the world with different cuisines. Few popular from Indian cuisine are sweet potato spicy mash(sakkarai vazhi kizhangu podimas), sweet potato vada, cutlets and kheer.
The western cuisine includes Sweet potato chips, fries, toast and sweet potato hash, etc.
Ingredients
2 medium-sized Sweet potatoes 400g
1 cup water (approx. to boil)
1 cup Whole wheat flour
½ cup brown sugar/white sugar
½ tsp salt
½ tsp baking powder
¼ tsp cinnamon powder
2 eggs
1 tbsp melted butter
½ cup lukewarm milk or water
Method
* Wash the sweet potatoes with running water.
* Peel the skin with a skin remover.
* Chop into rough big sized pieces.
* Add a cup of water just enough to boil them.
* Cover with a lid and cook for around eight minutes.
* Check the doneness by poking a knife or fork in the potatoes.
* If they get in easily then switch off the stove. You can also bake the sweet potatoes instead of boiling.
* Immediately drain the excess water, take the cooked sweet potatoes in a plate and mash well.
* In another mixing bowl, take a cup of whole wheat flour.
* Add half a cup of brown sugar or plain sugar.
* Next add a quarter tsp of cinnamon powder, 1/2 tsp of salt and 1/2 tsp of baking powder.
* Give a good mix to all the dry ingredients well with a fork.
* Add two whole eggs, melted butter and the mashed sweet potatoes.
* Also, add a half cup of lukewarm milk or water to adjust the consistency of the batter.
* Combine the wet and dry ingredients well with an egg beater.
* Heat a nonstick griddle or pan to medium temperature.
* Grease the pan with a drop of oil.
* Drop a large spoon full of batter on the hot griddle. Do not spread.
* Cover with a lid and cook the bottom for two minutes.
* You can do two to three pancakes at a time.
* Be careful as the bottom side of the pancake turns brown very fast because of the brown sugar.
* Flip the pancake with a spatula gently and cook the other side for two more minutes.
* Remove from the tawa and repeat the process for the rest of the batter.
* Serve the sweet potato pancakes with honey or maple syrup.
* In fact, they don't need any accompaniment as it has natural potato sweetness and sugar/
