Rose Falooda is a popular and refreshing Indian dessert that is perfect for cooling down on a hot summer day. Ingredients
2 cups full-fat milk (chilled)
5 tablespoons rose syrup or to taste
1 banana
1 tablespoon chia seeds (basil seeds can be used if chia seeds are not available)
1/2 cup or a handful of falooda sev
3 scoops kesar-pista or vanilla ice cream
1 tablespoon chopped pistachios
1 tablespoon sliced almonds
Method
* Soak chia seeds in water for 15 minutes. After 15 minutes, the seeds will get swollen. Drain them to get rid of excess water and keep them aside.
* Boil the falooda sev in water for 4-5 minutes or till they are cooked. Drain the sev and rinse them immediately with cold water to avoid further cooking. Keep them aside.
* Combine chilled milk, banana, 3 tablespoons rose syrup and 1 scoop ice-cream in a blender. Blend till smooth.
* Blending the milk with banana and ice-cream will make it slightly thicker and save you the time and effort of simmering it and then chilling it in the refrigerator.
* It tastes equally delicious; in fact you can hardly find any difference in taste.
* To serve, take 2 tall glasses. Add a tablespoon full of falooda sev in each glass. Top it with a tablespoon of soaked chia seeds. Pour 1 tablespoon of rose syrup.
* Add the rose flavoured milk till each glass is 3/4 full. Add a scoop of ice-cream and and a teaspoon of soaked chia seeds.
* Garnish with chopped pistachios and almonds.
* Serve immediately.
